Sweet Potato-Parsnip Mash

• 1 large sweet potato
• 2 parsnips
• 1/4 cup apple cider
• salt and pepper to taste

1. Peel and cut sweet potato and parsnips into chunks.
2. Boil for 15 to 20 minutes or until tender.
3. Drain and return to pot with apple cider, and a dash of salt and pepper.
4. Mash until nearly smooth.
